Toasted Oatmeal Waffles

We don't go all out for breakfast on the week days. On the weekends I do. I say, "I" because Daddy thinks I do too much at breakfast time.

This morning the boys wanted waffles. I made waffles, banana smoothies and we had spinach leaves.

Here's how we made the waffles {Mica sort of helped}:

In a large sauce pan heat one Tablespoon of coconut oil. Once melted, add the oatmeal and stir for eight to ten minutes. Lower the heat, add the water and stir until it has absorbed into the oatmeal. Pour the oatmeal in a mixing bowl. Add all the wet ingredients to the oatmeal. Then add all the dry ingredients.

I hardly ever have buttermilk laying around, so I have to make a substitute. To make buttermilk: 1 Tablespoon of lemon juice and add enough milk or plain yogurt to equal 1 cup. Let stand 5 minutes before using it.

Everyone loved their meal.

I never even heard of coconut oil, but it sure sounds good. I love waffles. I will be sure to try these, although probably with butter, as I doubt I will find the coconut oil. :)
Great sounding waffle recipe!

Alissa.... where is the oatmeal in the recipe? Did you substitute the all purpose flour?

I didn't know you could make a substitute for buttermilk, that's good info. to file away. :)

We always do big breakfasts on the weekends too.

Hahahaha... there it is!! I am going to try this when I am finished with my cleanse. I will try to substitute the flour for something else.

Those sound amazing. My boys aren't big on waffles, but I bet this would work well for pancakes, too.

This looks delicious and wonderful to make, but I need a waffle maker first! I love using coconut oil also!

This sounds yummy! Bonus-not a lot of sugar! I like that the boys help you in the kitchen. I feel that is so important. I do the same with my GG.

I think that is awesome you go all out on the weekends for breakfast! I am sure your family really appreciates the effort you put into making it for them.

We only do a nice breakfast on the weekends here once in a blue moon. I think we all enjoy sleeping in more than food lol.
