Muffin Cups

I saw pinned on Pinterest ham and egg muffin cups. I attempted to make some.

They turned out tasting good, but the tips of the ham got burnt. I don't know how to fix that. Cover them in foil maybe?

I didn't measure anything. I imagine the measurements would change with how many eggs you are going to use anyway. I just mixed egg, chopped green onion, dried mustard, a little bit of mozzarella cheese, and pepper. Then I sprayed the cups with Olive Oil spray, laid a single slice of ham in each one and poured the egg mixture in that.

I also made traditional muffins using substitutes for all purpose flour. I used brown rice flour and coconut flour instead. Then added June Berries, which can replace Blue Berries.

It turned out to be a pretty good breakfast, minus the burnt part on the ham.

  1. Ooo they look scrumptious! In the photos I've seen the bacon wasn't so high above the egg so maybe that's why they didn't burn

  5. Yep, I bet the foil would be the perfect solution. I had that problem once upon a time w/pie crust. The cups are cute!
