Mexican Chicken and Pumpkin Soup

A few weeks ago I processed a few pumpkins. I didn't want to make only unhealthy things. I looked up pumpkin soups.

There's two problems I have with pumpkin soup:

1) The boys do not like it.

2) There isn't protein in it to fill the boys up.

I found a Pumpkin Soup Recipe with Chicken in it. This recipe is derived from here.


If you like Mexican things, you'll like this soup.


Everyone in my house loved this soup!

    I've never had a soup with pumpkin before, but this does sound yummy! I know Jason would really like it, so I am definitely printing this one off to try!

    That looks pretty good, actually. I don't think I have ever eaten anything with pumpkin in it except pie and bread, but the soup doesn't sound at all bad.

    I love all kind of soup...my fave is creamy mushroom! Can't get enough of it :)...this one looks yuuum though..

    I bet I could use sweet potatoes to make this soup. I am still in Montana and have sweet potatoes but not Pumpkin.

    I like soup tons. I have had pumpkin ravioli and loved it, but never had it in a soup! Bet my husband would like this one w/the chicken in it.

    I am not a pumpkin fan... So, I like the idea of trying it with sweet potatoes as mentioned above :)
