It's Hip to be Square Pop-Tarts

Travis and I made Strawberry Jam a week or so ago. We had some jam left over, but not enough to can another batch.

I decided I'd make some Strawberry Pop-Tarts with some of the jam. 


You really can use any flavor of jam you'd like. The jam doesn't need to be homemade.


I made 2 batches, and doubled everything. On the weekends I make big breakfasts, so everything will last throughout the week. Plus I have a lot of jam to use up. I'm giving you a single recipe. A single recipe will make about 16 pop-tarts, and a double recipe will make about 32 pop-tarts. 

Set the oven to 400 degrees. This will take 18-20 minutes to cook.

Pastry:

2 1/2 cups all purpose flour
1 1/4 teaspoon salt
6 tablespoons butter (chilled and cubed)
3/4 cup shortening (chilled and cubed)
1/2 cup ice water

Directions:

Pour the flour and salt in a mixing bowl and stir. Add the chilled and cubed butter and shortening. Combine with a pastry cutter. Work it until it has all been mixed, and is crumbly. Add in ice water, and stir. 

Flour a clean surface. I add flour to my rolling pin. Work the dough into a ball, flatten, and roll out.

Use a square cookie cutter to cut out your shapes to add to a sprayed cookie sheet.


Filling:

1/2 cup Strawberry Jam (You Can Use Another Kind of Jam)
1 Tablespoon Corn Starch  

Directions:

Mix and put just enough to fill the center of the Pop-Tarts. 

Extra Directions:

Whisk 1 Egg in a small bowl. Use a pastry brush to paint the butter on the edges. It will be the glue that holds it together.

Top with one more square piece.

Use a fork to crimp the edges.


It took my oven 20 minutes to bake these. I got everything else ready that I wanted to go with them in this time. 

Frosting:

They taste good with no frosting at all. I mixed 1/4 cup powered sugar with water, and added in a spoon full of Strawberry Jam.

I frosted them when they just got out of the oven. The frosting runs, but sits up pretty fast. 


Breakfast Time:


Everyone enjoyed their meal. We had peaches, spinach leaves, scrambled eggs, a small glass of OJ and coffee with our Pop-Tarts.


I've made Pop-Tarts before, but was more successful this time around.
