Dandelion Shortbread Cookies

I continued on with making dandelion everything I could find online. Mica and Isaak rolled their eyes when I had them pick as many yellow flowers as they could. In my deep freezer I have a back stock of dandelion flowers.

Some recipes I added, or subtracted this or that.

Dandelion Shortbread Cookies did not disappoint. I was expecting the boys to put their nose up at me, instead they asked for a 2nd cookie.

What I added from the original recipe

Vanilla!

What I love about this recipe:

There isn't a lot of ingredients.
There is no need to frost them.

I love putting a tie on cookies. Seriously it takes something bland, and turns it into being cute!

Travis said that he couldn't even taste the dandelion.

Why Add Dandelion?
  • Highly Nutritious
  • Contain Potent Antioxidants
  • May Help Fight Inflammation
  • May Aid Blood Sugar Control
  • May Reduce Cholesterol
  • May Lower Blood Pressure
  • May Promote a Healthy Liver
  • May Aid Weight Loss

They probably won't help with weight loss because of the flour and sugar, but at least you know it has that power.

What is your favorite type of cookie?

  1. I also think putting a ribbon or tie on cookies make them look so cute. We never got any dandelions in our yard this year so I don't have any for this recipe :( I may have to swipe some from the neighbors LOL

  2. I have never heard of these! Amazing! My favorite cookie would be one my mom used to make at Christmas. It was a pineapple cookie with nuts. Not super sweet and didn't taste like pineapple really. I could eat them by the fistful!

  3. Forgot to add, my favorite cookie is soft baked chocolate chip cookies. Sugar cookies are a close second.

  4. I didn't know that dandelions were edible. I bet the shortbread is pretty tasty.
