Carrot Cake #doughnuts

Typically I wake up before everyone else. I lay there pondering about what I should make.

This morning I was thinking, What do we have that needs to be used up? We have lots of carrots, and raisins. No one in our house likes raisins all that much, except in desserts, or breakfast goodies like this. 

They were easier to make, then my Dark Chocolate Doughnuts, or the Lemon Doughnuts I've shared with you. They were just as good as both, but I have to say it's hard to pass up chocolate!

Sometimes I skip the glaze. It's not because it's not good. It's just that we don't need the extra sugar. This time I decided to add it.

What I Paired the Carrot Cake Doughnuts Up With:
  • Spinach Leaves
  • A Date
  • Bing Cherries
  • Cottage Cheese
  • Emergen-C Drink
It was a hit with everyone. Mica per usual on a weekend morning asked, for seconds.

It's Hip to be Square Pop-Tarts

Travis and I made Strawberry Jam a week or so ago. We had some jam left over, but not enough to can another batch.

I decided I'd make some Strawberry Pop-Tarts with some of the jam. 


You really can use any flavor of jam you'd like. The jam doesn't need to be homemade.


I made 2 batches, and doubled everything. On the weekends I make big breakfasts, so everything will last throughout the week. Plus I have a lot of jam to use up. I'm giving you a single recipe. A single recipe will make about 16 pop-tarts, and a double recipe will make about 32 pop-tarts. 

Set the oven to 400 degrees. This will take 18-20 minutes to cook.

Pastry:

2 1/2 cups all purpose flour
1 1/4 teaspoon salt
6 tablespoons butter (chilled and cubed)
3/4 cup shortening (chilled and cubed)
1/2 cup ice water

Directions:

Pour the flour and salt in a mixing bowl and stir. Add the chilled and cubed butter and shortening. Combine with a pastry cutter. Work it until it has all been mixed, and is crumbly. Add in ice water, and stir. 

Flour a clean surface. I add flour to my rolling pin. Work the dough into a ball, flatten, and roll out.

Use a square cookie cutter to cut out your shapes to add to a sprayed cookie sheet.


Filling:

1/2 cup Strawberry Jam (You Can Use Another Kind of Jam)
1 Tablespoon Corn Starch  

Directions:

Mix and put just enough to fill the center of the Pop-Tarts. 

Extra Directions:

Whisk 1 Egg in a small bowl. Use a pastry brush to paint the butter on the edges. It will be the glue that holds it together.

Top with one more square piece.

Use a fork to crimp the edges.


It took my oven 20 minutes to bake these. I got everything else ready that I wanted to go with them in this time. 

Frosting:

They taste good with no frosting at all. I mixed 1/4 cup powered sugar with water, and added in a spoon full of Strawberry Jam.

I frosted them when they just got out of the oven. The frosting runs, but sits up pretty fast. 


Breakfast Time:


Everyone enjoyed their meal. We had peaches, spinach leaves, scrambled eggs, a small glass of OJ and coffee with our Pop-Tarts.


I've made Pop-Tarts before, but was more successful this time around.

Buttermilk Cornbread #Muffins

I love trying new things for breakfast. 

On the weekends I usually go crazy by making big breakfasts, so food will last throughout the week. I'm programmed to wake up early, so it works out.

I saw in my cookbook recipes for Cheddar Spoon Bread and Biscuits Supreme. I said, "Why not add the two together?" Travis liked that idea. We made full recipes of each to mix together. That was a ton of muffins. I cut back on this recipe. Each recipe was cut in 1/2. I added other things that were so good in them: Bacon and Green Onions! 



Dry Ingredients:


1 1/2 Cups of All Purpose Flour
1/4 Cup Cornmeal
2 3/4 Teaspoons Baking Powder
3/4 Teaspoon Salt
3/4 Tablespoon Sugar
1/4 Teaspoon Cream of Tartar

Wet Ingredients:

1 Cup Butter
1 1/2 Cups Buttermilk
2 Eggs 
3/4 Teaspoon Salt

Extra Good Ingredients:

1 Package of Cooked Bacon
1 Bunch of Green Onions
1 Cup Cheddar or Monterey Jack Cheese




Directions:

1. Cook the bacon. Crumble when cool. Set aside. Shred the cheese and set aside. Cut the green onions and set aside. 

2. Combine the dry ingredients in one bowl. 

3. Combine the wet ingredients in another bowl. You will have to heat up the butter. 

4. Pour the wet ingredients into the dry. Whisk well. Stir in the extra good ingredients. 

5. Spray 12 muffin cups with baking spray. Pour the mixture in them. 

6. Bake at 400° for 30 minutes, or until brown on top. 

Tip on Buttermilk: You don't have to buy it! Put 1 1/2 Tablespoons vinegar (any kind will do) into a 2 cup measuring cup, fill to 1 1/2 cups with 2% milk. Let set for 5 or more minutes.

I love breakfast time! It's my favorite meal of the day! 

I try to make it semi healthy. We always have something green on our plates, some form of protein, a carb, and a smoothie with more greens, more protein, and fruit.

I put Maca Powder in our chocolate chip waffles this morning. It has more calcium than milk does. It's nice to know that this meal will fill up our boy's bellies. Isaak has basketball games on Saturdays, so he needs more protein added to his diet.



Waffles:

  • 2 Cups of Whole Wheat, All Purpose, or Bread Flour
  • 1 Tablespoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Baking Powder
  • 1 Tablespoon Maca Powder
  • 2 Tablespoons Coconut Sugar or Brown Sugar
  • 2 Mashed Bananas
  • 1 1/2 Teaspoons Vanilla
  • 6 Tablespoons Coconut Oil (Melted)
  • 1 2/3 Cup Unsweetened Almond Milk, Cashew Milk, or Cow's Milk
  • 2 Large Eggs
  • 1/2 Cup Dark Chocolate Chips
The waffles were so good! Actually the whole meal was great! I was only bummed that I had to wait to eat because I needed to take pictures and a video. ;)

10 Varieties of Gourmet Avocado Toast

Do you love avocados? I sure do! I like that they can be prepared differently.

At the Apel House We Have Avocados on and in:

  • Salads
  • With Tacos
  • Southwestern Egg Dishes
  • Smoothies With Mango, Kale Powder, and Orange Juice
  • Guacamole


I Also Use the Avocado Seeds in Smoothies:
  1. Slice the seed with a knife. Be careful it's slippery!
  2. Run the seed under warm water, and start to peel the dark brown peeling off the seed.
  3. Cut the seed in 4 sections. 
  4. Grind a section in a coffee grinder.
  5. Add it to a smoothie. 
*Note: the seed of an avocado lasts a really long time, much longer than an avocado its self! I keep the unused seed in a bag in the refrigerator.

Happy Saint Patricks Day Everyone

I hope you have a very happy green day!

We're not drinkers. I'd love to have a beer, but it doesn't agree with my allergies, so...no beer for me.

Travis is making corn beef and cabbage. I also have some homemade beer bread made.

This morning I woke up super early, and made: Matcha Buttermilk Pancakes.


They were super easy to make!!!

  • 1 Cup All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • 2 Tablespoons Sugar
  • 1 Large Egg, Lightly Beaten
  • 3 Tablespoons Butter, Melted
  • 2 Teaspoons Matcha Green Tea Powder
  • 1 Cup Buttermilk: 
Note: If you don't have Buttermilk around I have a trick - Add 1 tablespoon lemon juice for each 1 cup of milk. I hardly buy buttermilk.  

Other things my family devoured: 

  • Green Spinach 
  • An Egg
  • Apple Sauce
  • Pumpkin Seeds AKA Pepita Seeds
  • Dark Chocolate Chips


Mica said, "We're missing a green smoothie." Yours truly AKA ME broke the glass on the blender this week. I dropped a glass into it. I managed to grab the glass, but chipped the blender in the process. :( I get the dropsies from time to time. 

Do you have a brand of a blender that you like? I don't want to go super high end because I know they can be super expensive. We do use it daily. I'd like a nice one. I have a 30% card to Khol's, so I'm thinking of checking blenders out there.

Mini Apple Tarts


Sometimes I get this wild idea to be creative with food for breakfast on the weekends. When I have time. Sigh

I hate don't like making pies. Ok it's the crust I don't like fitting into a pan. If I can buy a crust pre made I'll do it. I should just watch tutorials on how to put crust in a pie dish. I've tried, and failed many times over again. Something always rips.

I can do what I did this weekend, which is cheat!

Why frustrate myself when I can make a crisp, or what I made this weekend Mini Apple Tarts?

Seriously if you have tips, or know of a great tutorial on laying pie crust in a pan I'll read the tips or watch the tutorial.

Mini Apple Tarts:

Mini Apple Tarts are easy, taste good, and are pretty healthy.

I made 1/2 a recipe of pie crust, but you can make however much you'd like. If you want a lot of tarts make a full batch. You'll just be in the kitchen longer. I used this crust recipe, but any recipe will do.

It helps to refrigerate the dough for 1/2 an hour, or you could make the dough the night before.

Roll out the dough and cut it into circles with a glass, or circle cookie cutter.




Cut apples into circle slices. Add onto the dough, sprinkle with cinnamon and sugar, crimp the edges and bake.



We set the oven to 425 degrees. It took about an hour to bake them to our liking. I was looking for the apple to be baked, and the crust to be tan. 


They were good! We all liked them!

I could see making Mini Peach Tarts too. Although the big seed in the middle gets in the way for a close to perfect circle.

You could top with a dollop of whipped cream. It would taste good with vanilla ice cream for a dessert. We actually had them for breakfast though.

    Crazy Pancake Bunnies

    I decided to try and make Crazy Pancake Bunnies for breakfast. You can use your imagination with the ingredients.

    The boys helped sort of. ;) 


    I Used:
    • 1 Large Pancake for the Face
    • 2 Baby Pancakes for the Cheeks
    • 1/2 a Strawberry for the Nose
    • 1/4 Banana for Each Ear
    • Dark Chocolate Chips for the Eyes
    • Cut Up Dried Apricots for the Whiskers
    • Cut Up Mini Marshmallows for the Teeth
    • Steamed Collard Greens for the Background
    • 1 Hard Boiled Egg for the Background

    Usually Dad says, "What the..." when I make crazy food things. This morning he said, "This is cute."

    The Best Breakfast Cookies

    I'm always trying different things for breakfast that will also work great for snacks. Last weekend I made breakfast cookies. I made 2 batches because they sounded so good. Then I kept them in the refrigerator to last throughout the week. 

    I knew this week would be draining for me, since I started teaching a new semester.

    I have to say that these are the best breakfast cookies I've ever made! They were a hit with the whole family! They are gluten free, egg free, filled with protein, and yummy!




    Breakfast Cookies



    These cookies work great for a snack to! The boys are always hungry after they've been at the Y. These cookies are loaded with protein, and don't have a lot of sugar! I kind of think of honey similar to sugar. It is local honey I used. I didn't use peanut butter, or almond butter that is made with added sugar. Bananas are more of a starchy fruit, which turns to sugar, but do contain potassium.

    I used a coffee grinder to grind up my flaxseed. I've read that it's better to eat flaxseed that is ground up right before you use it. I don't have almond flour, or oat flour on hand, so I just ground both of them in my food processor when a recipe calls for them.

    Of course we had other things with them: A Green Smoothie, Steamed Kale, A Fried Egg, Pomegranate Seeds (for Isaak and I), Blueberries (for Mica), A Banana (for Dad), and Black Coffee (for Mom and Dad).

    These were a hit!



    They do have a banana taste to them, but are harder like a cookie.

    Breakfast Cookies With a Downloadable Recipe

    Daddy says he only likes peanut Butter Cookies, Sugar Cookies, or Chocolate Chip Cookies. All those have so much sugar in them. I've been trying not to make them. They are just too tempting to me.

    I felt like something a little different, so I tried out some Breakfast Cookies. They are good! Ours had homemade Almond Butter in them, but you can use any nut butter to make them.

    We had them with our typical breakfast: Greens and a smoothie. I also gave them to the boys as a snack. They are hungry all the time. This is a much healthier alternative to the typical cookie.

    Oatmeal Superfood Power Bars

    It's time to pick June Berries again. I'm always searching for recipes, and ideas on how to use them. Really any recipe that has Blueberries, June Berries can be used as a replacement.


    I just tried a new recipe. This recipe I did actually make with Blueberries, but next time I plan on replacing the Blueberries with June Berries.



    The boys love Oatmeal Superfood Power Bars. Even Daddy loves them. He's the pickiest one out of all of us. This morning breakfast consisted of: Oatmeal Superfood Power Bars, steamed Collard Greens, and a smoothie with mixed fruit, kale and water.

    Crying and Crying Again

    Mica rarely cries. He's a pretty happy kid overall.

    On April Fools Day he sobbed because he couldn't think of any pranks to play on us.

    The day before he said he had tricks to play on us, but I guess they left his brain, or he never had any tricks officially planned to begin with. I gave him a hug, and told him it was ok. I said, "Mica you have all day to think of something."

    Then on Wednesday Mica was sobbing for 15 minutes because he didn't want to go to school to eat breakfast. 

    Our boys just don't eat breakfast at school. They don't eat there for a few reasons.

    1. It's free. Sounds like an odd reason right? Who doesn't like free things? I'm a blogger, I love free things. I also know our country is in some serious debt. I personally don't agree with free breakfast during the school year, and free lunch during the summer. 

    2. Do I feel bad for kids that do not get breakfast? Yes! I really wish those parents thought about that before they had them. Maybe they could apply for free, or discounted meals. I just don't think they should hand them out for all of US's public schools.

    3. When my kids eat breakfast at home I'm in control of what they eat. The school already has them at lunch time.

    Breakfast came up because Isaak's teacher included a note that for this week she'd like for the kids to come eat breakfast in the classroom, which is a special treat, so he was going.

    We told Mica he had a choice: 1. Eat something small at home (spinach leaves, fruit and water), and eat breakfast at school, or 2. Eat a full meal at home, and wait in the car with Dad until school starts. Mica  chose to go eat at school.

    After I gave him his snack basically, he decided to change his mind.

    Anyone want to guess why he didn't want to eat breakfast at school?

    I was thinking he was bullied, or something. Nope!

    He didn't want to sit next to people that eat cereal. WTH! He cried about it for 15 minutes. I said, "That's most of American kids, Mica! That's what your Dad ate growing up!" Mica called them, "Weird cereal eaters!" 

    No judging on the color of their skin, what clothes they wear, or their religious beliefs. Nope! He was judging them based on what they eat. Odd!


    Get this! Last night after dinner the boys were both still hungry, so I offered them cereal, and they both ate it. I kept calling him the, "Weird Cereal Eaters"!

    This morning we gave the boys a choice again...because the Kindergartener's are hanging out in the classroom all week in the morning. Mica looked and saw that they were having cinnamon rolls. He said without a tear, "I want to eat breakfast at school today."

    Creative and Silly Breakfast

    I'm in love with protein bites. There are many that I have pinned. I never make them the exact same way every time. Many of the ingredients can be swapped out with something else. The best thing is that the recipe is no bake. Just stir up the ingredients, use a small scoop and there you have the main part to your breakfast. 3 fill up the boys and 4 fill us adults up.



    There's also spinach leaves on the plate as hair. The lips are apples, a slight amount of peanut butter and small marshmallows teeth. It doesn't look like a lot is there. The protein bites really fill us up.
