Spaghetti Pie

  • I tried something new tonight. I made a spaghetti pie with spaghetti squash instead of regular spaghetti. It was pretty good!
  • I mixed an egg, 1/2 cup of parmesan cheese with 1/2 a spaghetti squash. I put it in a sprayed glass pie dish as a crust.
  • Then I covered the inside with cottage cheese, a layer of Italian sausage, 1 can of tomato sauce, Italian seasoning and shredded mozzarella cheese.
  • It baked at 350 degrees for 30 min. I like the cheese a little browned, so I put mine in longer.
  • It was great tasting!
  • The downfall's...there was a lot of liquid that I kept having to drain as I cut. Squash puts out natural liquids as it cooks. I also have 1/2 a squash left. Usually after a meal like this we're ready for something different. So...I put the other 1/2 of the squash in the freezer for a later date.
  • But...a little draining was well worth it because it did taste good!
  • Note: The Italian sausage can be substituted with ground hamburger. The cottage cheese can be substituted with ricotta cheese - if you do this you will not use the whole container; that is why I stick with cottage cheese for this recipe. I have put a layer of spinach and/or mushrooms on there too, but I didn't this time around.
  • Defiantly better for you then actual spaghetti.
