We took my parents out to dinner tonight at The Outback.
It was pretty fun. It's hard to have a lot of grown up conversation with the kids being kids.
Mica gets pretty talkative, and Isaak was needy.
Pure usual I have enough food for tomorrows lunch. The food is really good.
Isaak and Mica got to eat for free. Mica got a couple coupon's over the summer for a free meal, drink and dessert. I just split what he's having with Isaak, and there is still more left over. Of course they manage to eat all of their dessert. LOL
For a one year old, Isaak is a really great helper!
I had him go downstairs on a field trip with me to do some laundry.
I slid a chair in front of the washer, put the soap in, turned the cycle on and started handing Isaak clothes that he proceeded to put in the washer. Score...it kept him occupied and happy; plus we got work done! :)
Later on he helped me combine the trash. I tied up the little trash bags around the bedrooms and bathroom, handed them off to Isaak, and he proceeded to throw them away in the big trash can in the kitchen. He got mad when that task was over. :(
It is offical, I now have what my whole family had a few days ago...the stomach flu.
I'm supposed to teach tomorrow and the next day.
I felt it coming on long before I actually threw up.
It's nothing compared to when I was sick with the stomach flu at the tale end of being pregnant with both Mica and Isaak's. With Mica I was hospitalized, and with Isaak I just drank lots of water. It is horrible feeling kicks on the inside, and having to throw up. YUCK!
I tried something new tonight. I made a spaghetti pie with spaghetti squash instead of regular spaghetti. It was pretty good!
I mixed an egg, 1/2 cup of parmesan cheese with 1/2 a spaghetti squash. I put it in a sprayed glass pie dish as a crust.
Then I covered the inside with cottage cheese, a layer of Italian sausage, 1 can of tomato sauce, Italian seasoning and shredded mozzarella cheese.
It baked at 350 degrees for 30 min. I like the cheese a little browned, so I put mine in longer.
It was great tasting!
The downfall's...there was a lot of liquid that I kept having to drain as I cut. Squash puts out natural liquids as it cooks. I also have 1/2 a squash left. Usually after a meal like this we're ready for something different. So...I put the other 1/2 of the squash in the freezer for a later date.
But...a little draining was well worth it because it did taste good!
Note: The Italian sausage can be substituted with ground hamburger. The cottage cheese can be substituted with ricotta cheese - if you do this you will not use the whole container; that is why I stick with cottage cheese for this recipe. I have put a layer of spinach and/or mushrooms on there too, but I didn't this time around.
Yesterday I took Daddy's flex shaft tool outside and cut off the old rusted lock that was on the gate between us and the neighbors house. It very well could of been our lock from the people that lived in our house before us.
I did it for a few reasons: I wanted to allow the boys go through the gate instead of climbing over the fence for a ball that goes over it and I wanted to be able to go over to suck up more leaves for mulching.Their backyard is full of leaves that are blowing over our way.
I'm really into mulching leaves this year. My hands are stained brown from all the leaves.
The new neighbors haven't moved in yet, but by the looks of it they are moving in sometime soon, because I saw them for the first time today.
I have a real climbing fence phobia. I got stuck on the top of one when I was little. I was hanging there by the fabric of my shorts, and a big wedgie. It wasn't too funny then, but funny now.
Two nights in a row we've had homemade soup. Mica really isn't a big fan of soups, but with the stomach flu going on in our family, soup is a great thing to eat.
We've also had lots of jello and crackers.
Tonight I'm making Spaghetti Pie. Isaak won't be able to eat it, but the rest of us will.
