Mini Apple Tarts

Sometimes I get this wild idea to be creative with food for breakfast on the weekends. When I have time. Sigh

I hate don't like making pies. Ok it's the crust I don't like fitting into a pan. If I can buy a crust pre made I'll do it. I should just watch tutorials on how to put crust in a pie dish. I've tried, and failed many times over again. Something always rips.

I can do what I did this weekend, which is cheat!

Why frustrate myself when I can make a crisp, or what I made this weekend Mini Apple Tarts?

Seriously if you have tips, or know of a great tutorial on laying pie crust in a pan I'll read the tips or watch the tutorial.

Mini Apple Tarts:

Mini Apple Tarts are easy, taste good, and are pretty healthy.

I made 1/2 a recipe of pie crust, but you can make however much you'd like. If you want a lot of tarts make a full batch. You'll just be in the kitchen longer. I used this crust recipe, but any recipe will do.

It helps to refrigerate the dough for 1/2 an hour, or you could make the dough the night before.

Roll out the dough and cut it into circles with a glass, or circle cookie cutter.

Mini Apple Tarts

Cut apples into circle slices. Add onto the dough, sprinkle with cinnamon and sugar, crimp the edges and bake.

We set the oven to 425 degrees. It took about an hour to bake them to our liking. I was looking for the apple to be baked, and the crust to be tan. 

They were good! We all liked them!

I could see making Mini Peach Tarts too. Although the big seed in the middle gets in the way for a close to perfect circle.

You could top with a dollop of whipped cream. It would taste good with vanilla ice cream for a dessert. We actually had them for breakfast though.

Birthday

Today is my birthday.

A few days ago I picked out of the closet somethings I've won this past year. I set them out on Daddy's day off and said, "Here are my presents, wrap them." I'm not the kind of wife the expects my husband to buy me expensive things. He's not that kind of husband with me either. I have to say he's done well, remember he knows how to design and make high end jewelry you can find here.

The crazy thing is, is I don't remember exactly what I got. I won a $50 GC to Novica from My Baby's Green. Novica wrapped the earrings up. I don't remember exactly what they looked like. I know they are pearl cluster earrings and look something like this:

Pearls are my alternative birthstone. Alexandrite is pretty darn expensive!

I grew up thinking that the 21st was always the first day of summer. Yesterday I learned that it depends on the sun, whatever that means. The 20th can be the first day of summer as well. Happy first day of summer to everyone out there.

I'm also between a Gemini and Cancer. My husband says I carry more Cancer traits. I don't really follow that stuff though.

I also got a shirt from there. That to I don't remember. I looked at it when it came to me and packed it back up. I looked a lot of their shirts, so it could of been any one of them. I just remember that I liked it a lot. It reminded me of something that my Step Grandma from the Philippines would have picked out. Only this is the right size. She used to get us stuff that was the wrong size all the time.

I want to say it was this shirt, but I could totally be wrong. Surprise to me!

We're eating dinner at my parents (Grandma and Grandpa Spiehs's) house tonight. Emerson's 1 year birthday party is this weekend. Then next weekend we're celebrating Father's Day and my birthday at a lake or park. My Dad likes the outdoors and I didn't want anyone dealing with the mess and hassle of cooking and cleaning. Everyone is bringing their own picnic food, subway or Panera Bread. Panera sounds good to me!

I made a Chocolate Moose Pie for work. We bring our own birthday treats. I had an extra bought pie crust left over from Father's Day. I wanted to bring something easy.

I have to say at work I want to hang myself today (not literally)! My one and only summer school student forgot her portfolio; she left it at her parent's house. Go figure, the class is called Portfolio Development. There's a reason why she didn't pass the class the first time. Then I just found out that I'm supposed to talk to a bunch of high school teachers tomorrow. All the things I knew I was to talk about, except for one topic. It's supposed to last an hour! EKKK! Luckily it's over something I'm very familiar with. I didn't even know the order in which we were supposed to talk about what things. I had to ask. That will take over my entire afternoon.

Grandpa Wanted Pie

Grandpa Spiehs (my dad) had his Atrial Fibrillation/Pulmonary Vein Ablation Procedure on the 21st. He did really well. I got a call from Aunt Terra (my sister) saying, "When you come up bring Dad some pie. He wants pie. The doctor put him on a low fat diet, but he wants pie. Mom said it was ok to give him some." So I went and picked up 1/2 a pie. They sold 1/2 a pie. Grandpa always watches what he eats. He's like the BEST eater ever. The guy has salad for breakfast. He's skinny as a rail to. Pie it was.

I walked into his hospital room and said, "Man you look white!" I was only kidding. The guy is always white.

Then we talked for awhile. It was nice having uninterrupted conversation. Mica and Isaak are not the best to have around if you are wanting to have a deep conversation with someone. Trust me, we've had talks about not interrupting.

Today Isaak and I visited Grandpa and Grandma Spiehs again. Only this time it was at home. I wasn't going to visit because Grandma said Grandpa barely slept in the hospital. When I brought up coming they wanted me to come. So we did.

Why is is that some kids like to pack {to go no where} and sort things out? I'm not sure exactly. This toy is cool because it teaches kids about color, being healthy in a fun way, math and enhances hand eye coordination.
