Fruit Pizza #recipe

I love desserts. So I may have a sugar tooth! I have gone on diets just to eliminate sugar for awhile. Kind of detoxing off of it is good to do.

We had Emerson's 7th Birthday and my 42 Birthday Party last weekend. 

My sister was making a sorbet desert. I love sorbet, but I hate graham cracker crust things. I don't mind graham crackers. I just don't like them all crushed up.

So I made a fruit pizza!


I have the recipe below, but I'll explain it as well.

First off I made a batch of ice cream cone sugar cookies for Travis' work and my work. The cookies had different flavors: Chocolate, Strawberry, Lemon and Vanilla. All that was good, but it left me with left over frosting. I just used the vanilla to make the strawberry and lemon. Now I have lemon and strawberry extracts.

I wanted to use the left over frosting on the Fruit Pizza - as much as I could.

1. I rolled out a batch of homemade cookie dough onto a round pan.

2. I used the ice cream cone cookie cutter - backside to imprint the dough, not to cut it. They are part of the big circle, not separated.

3. Then I painted the cones with blended egg yolk, and sprinkled them with brown sugar.

4. Then I baked it on 350 degrees for 9 minutes, or until light brown.


5. I let the crust cool.

6. I frosted the cones with some frosting I had left from the cookies I made.

7. I put plain cream down in the middle.

8. Isaak topped it with fruit that Travis and I cut.

9. The fruit in odd spots like the cherries on the cones, and grapes on the edges were cut in 1/2. I spread cream cheese on them to act as a glue. It worked really well!


It tasted great too! What's your favorite desert? I think I love chocolate cake with chocolate frosting the most!

Egg Shaped Fruit Pizza

I saw a few Egg Shaped Fruit Pizza's online. I decided to make one myself at Easter time. With my own twist of course.

You can use any recipe of sugar cookie dough. I happened to use a family recipe. I added lemon extract instead of vanilla to give it a springy flavor. I thought the lemon favor complimented the fruit on top well. I rolled it out on a floured surface, cut it in the shape of an egg, and had my husband help me put it on a sprayed pan with a few big spatulas. I used the remainder dough to make into a crust.

You bake it just like you would sugar cookies. I think my recipe is 350 degrees for 20 minutes, or until it's slightly browned.

Set out 1 package of cream cheese to soften. Mix the cream cheese (I used the one with 1/3 less fat) with 1/4 cup sugar.

Spread the mixture on the big cookie (once the cookie has cooled). I find that a rubber baby spoon, or small spatula helps spread it on. 

Next add the cut up fruit. This recipe is better in the spring and summer because there are more fruit options. Try to use fruit that has color contrast.

Kids like to help, so let them. I pre-cut some of the fruit to make the process for the kids faster and smoother. Otherwise they get impatient. It's a good idea if you have more then one kid helping to rotate them. Mine tend to fight about how it's going to look, and get in each others way.

You can top with juice concentrate. I skip this step all together. To me it's just more sugar, and if it's not gobbled up, the juice concentrate can make the crust soggy.


It sat out for three hours, and still wasn't bad. This is great for family get gatherings, or potlucks. You can make just a circle, square, or rectangle one. For St. Patty's day I could see a rainbow shaped one.

This is one I made in the past.

If you do in fact have left overs it freezes well.

Cake or Fruit Pizza?

I can't decide what to make for Isaak and Evan's joint birthday party! I need to decide!

I did decide this, I'm not using a ton of red and/or black food coloring!

Here's a Fruit Pizza I made for some other event:



If I make a Fruit Pizza, I'll put berries in the shape of Spider-Man's face or logo. Blueberries and black berries for the dark parts. Raspberries, strawberries and June berries for the red areas.

But...let's just face it kids want CAKE!

I thought about making a round cake. I'd frost it with white cream cheese frosting or blue cream cheese frosting where you can see the sky. It would be pretty cool if I did a gradient! Then the dark buildings that would be standing up vertically around the base of the cake would be chocolate graham crackers with yellow windows pipped on them. On the top of the cake would be a pipped web with a Spider-Man figure at the top.  Maybe 2 Spider-Men at the top for each birthday boy.

I wish they made Spider-Man Little People. They make all the other Super hero's. I know it's a different company that made Spider-man. Some are DC and some are Marvel, right? Super hero's are super hero's to me.

They make Batman. Mica LOVES Batman. Wouldn't a Spider-Man be cute?!

I need feedback! What do you think? I'm not saying I'll go with what you say (sorry). I just know I might change my mind after shopping.
