Chicken and Dumpling Soup {Recipe}

I love Chicken and Dumplings. Usually I make the a traditional recipe, and the dumplings are made from scratch.

One night a few months ago I had a dream I made Chicken and Dumpling Soup. It was go good!

Nom Nom Chicken and Dumpling Soup!

I didn't even look up recipes. I knew I saw potato dumplings somewhere, and thought they'd be perfect for this soup. The homemade ones I typically make would get soggy, and wouldn't work. The question is: Where did I see potato dumplings? I looked at two grocery stores I usually go to, and they weren't there. Finally I found the potato dumplings at Big Lots. I made sure to pick up a few packages if this recipe was as good as it was in my dream.

I have to say, it's a good thing I picked up 2 packages of dumplings! Chicken and Dumpling Soup is amazing! My family must of agreed...they gobbled it up!

I just used some of the ingredients I've used in my regular Chicken and Dumpling recipe. I added more vegetables. One thing I used to do, that I don't do anymore is shave off the carrot skin. I leave it on.

It took about a half hour to 45 minutes to make. I paired it up with homemade blueberry muffins and a side of green beans. One can never have too many veggies.

Ingredients:

  • Olive Oil (To Cover the Pan) or 2 Tablespoons of Butter
  • 1 Big Onion
  • 1 Garlic Clove
  • 3 Carrots
  • 3 Celery Stalks
  • 1/2 a Container of Mushrooms
  • A Handful of Spinach Leaves
  • 2 Italian Sausage Links
  • 2 Boneless Skinless Chicken Breasts
  • 2 Cups Chicken Broth
  • 4 Cups of Water
  • Salt & Pepper to Taste
  • 1 Teaspoon Marjoram
  • 1 Package of Potato Dumpling

Directions:

Drizzle the non stick pan with olive oil, or heat up the butter.

Start Chopping:

I chopped one veggie at a time, and added it in in this order: Onion, garlic, carrots, celery, and mushrooms.

Stir often, cook until the veggies are tender. Add in a handful of spinach leaves. At this point I put the lid on to make the spinach wilt faster.

I put the veggies into one of our soup bowls. I'm all about using as little dishes as possible.

Cook the Italian Sausage, and break it up as it cooks. Set aside in a different soup bowl.

Cook the diced chicken until it's no longer pink.

Add the veggies and Italian Sausage back into the pot.

Pour in the water and chicken broth. Add the salt, pepper, and Marjoram. Heat back up, and add in the potato dumplings.

Heat back up, and serve.

It was perfect! Have you ever cooked or baked in a dream?

Sila Silicone Storage Bags Review

I'm so addicted to getting things that I can reuse! I have had cloth bags for years. They are good for many things, such as daily lunches. Recently I've been getting and using silicone bags.

Each bag comes with a different colored top! I can say, "Mica get me the bag out the freezer that has the red top." He'll come up with the right bag! Yay! The tops are hard for kids to slip on and off. They are even hard for adults to slip on and off the first few times.

Sila Silicone Bags are Wonderful for:
  • Soups
  • Produce
  • Nuts
  • Seeds
  • Dried Beans

and much more!

I don't know if I'll use them for soups. For us glass containers that you can just throw in the microwave are easy peasy for soups. I will use these for berry picking, tomatoes that we've processed, but haven't canned yet. I also make a wellness drink that's packed with anti inflammatory goodness! Usually when I make that I put 1/2 of it in the freezer. These bags are wonderful for storing that in! It's so wonderful that they can go in the freezer!

I like the bags for produce because they keep the moisture of the fruits and veggies locked in. Net bags don't do that. I'm often left with rubbery tasting veggies. Net bags do work for bananas. We take them out anyhow.

Airtight and Leakproof!

Sila Silicone Storage Bags are both. The silicone is food grade! They wash up easily.

Cabbage Roll Soup #recipe

This is the time of year where we become loaded with garden tomatoes. Some years we can them, other years I just take the skin off them, deseed them, bag and freeze them. The extra juice from the tomatoes goes into ice cube trays. We use the tomato juice in soups.

We all like Cabbage Roll Soup!

White Chili #Recipe

I love Chili! It's just one of those comfort foods to me. Usually I make the usual: Red Tomato Chili. This weekend I decided to make a White Chili that I haven't made in awhile.

It's super easy to make, and it's so good!

Travis and I love spice!

If you're not a big fan of spicy things, then you may want to use less Cayenne Pepper. I think the Green Chilies add to the spicy flavor.

The boys aren't spice lovers. They used to even say that regular toothpaste, and soda were all spicy! They used natural toothpaste for years, and rarely had soda. Soda was only consumed when we went out to eat, which wasn't often. Maybe it was the fizz in the soda, and strong mint taste in the toothpaste that they had trouble getting used to. They like those things now.

I've been making the boys try spicy dishes since they were itty bitty. They still haven't acquired that love for spice that I've been waiting for. It will probably happen when they are out of the Apel house, and into their own Apel houses.

I think this recipe is the bomb! It's fairly healthy too!

Jiva USDA Organic Split Moong Beans Green 2 Pound Review

This time of year it seems like we eat soup a lot. It's easy, and it tastes good!

I got Jiva USDA Organic Split Moong Beans Green 2 Pound to review. A $9.99 value.

Split Moong Beans are from the highest quality, organic Moong available. This is a very common Indian lentil, and is also known as Moong Chilka or Moong Split.

Moong is of very high purity, and is non irradiated or ETO treated and is grown in certified organic farms in India. There is no artificial colors, flavors, or preservatives. Beans have excellent health benefits and are commonly used in the Northern part of India.

It contains no cholesterol, and very little fat. It's a healthy addition to those on a diet. It's full of protein and fiber.

I decided to make a soup with some of my Slit Moong Beans. I made Spinach and Moong Beans Curry Soup.

It was a hit with Dad and I. The kiddos didn't like it as much. They're not big fans of Indian food all together. The adults love all of it. We have a rule in our house: You have to try new foods once. If you don't like it, I won't make you eat it again. We don't throw food away. I do like this rule. It has made our kids open minded with food.

I served it with rice, in the end I dumped the rice into the soup, and ate it all together. It was great that way!

Do you have any favorite Indian dishes?

Mexican Chicken and Pumpkin Soup

A few weeks ago I processed a few pumpkins. I didn't want to make only unhealthy things. I looked up pumpkin soups.

There's two problems I have with pumpkin soup:

1) The boys do not like it.

2) There isn't protein in it to fill the boys up.

I found a Pumpkin Soup Recipe with Chicken in it. This recipe is derived from here.

If you like Mexican things, you'll like this soup.

Everyone in my house loved this soup!

Split Pea Soup or Witch's Skin?

I packed in Mica's lunch yesterday a homemade blueberry muffin, grapes, split pea soup and almond milk.

Check out this Healing Yellow Split Pea Soup:

I came home from work and Mica says, "Mom I got no bad checks and I did not kiss any girls." I praised him.

Daddy: "Tell Mommy about lunch Mica!"

Mica: "Oh it's about the Split Pea Soup. The people around me said it was 'Throw up!' I had to lie Mom! I told them it was melted witches skin!"

Mommy and Daddy: It's ok to lie as long as it's being silly and standing up for yourself! LOL
